Apricot Bran Cookies


  • 1 cup (70g) bran

  • 1 cup (150g) self-raising flour

  • 1 cup (80g) desiccated coconut

  • 125g HapiSoy Sweetened Condensed Soy Milk

  • 1/2 cup (125g) finely chopped glacé apricots

  • 60g vegetable oil

  • 1/4 cup egg replacer


  1. Pre-heat oven to 200ºc/180ºc fan forced and grease oven trays

  2. Combine all ingredients in a large bowl

  3. Place tablespoons of the mixture 5cm apart from each other on the trays 

  4. Bake the cookies for 10 minutes or until lightly browned

  5. Cool on trays
