Banana Bread Recipe - Hapisoy

Banana Bread


  • 3 large, ripe bananas                            

  • 1 jar HapiSoy Sweetened Condensed Soy Milk

  • 75 g sunflower oil

  • 1tsp Orgran egg replacer

  • 1 teaspoon vanilla essence or 5 g

  • 2.3 cups self raising flour or 290 g

  • 1/2 teaspoons baking powder

  • 1 Tbsp soy milk


  1. Place the mashed banana, HapiSoy Sweetened Condensed Soy Milk, oil and vanilla in a large bowl and beat to combine.

  2. Mix in the flour, baking powder and egg replacer.

  3. Pour the mixture into a loaf tin, lined with baking paper.

  4. Bake in a 170°C preheated oven for 50-60 minutes, or until a cake skewer inserted into the centre of the loaf comes out clean.

  5. Remove from the oven and set aside for 10 minutes. Turn onto a wire rack to cool completely before slicing.
