Go-For-It! Cookie Bars

Ingredients

  • 1/2 cup (1 stick) salted butter, melted

  • 1  1/2 cups granita cracker crumbs

  • 375g HapiSoy Sweetened Condensed Soy Milk

  • 3/4 cup old-fashioned or quick oats

  • 1/2 cup milk chocolate chips (dairy-free)

  • 1/2 cup peanut butter chips

  • 1/2 cup mini m&m's (or dairy-free chocolate snack of choice)

Method

  1. Preheat oven to 180ºc

  2. Spray a 9 x 13 inch baking dish with cooking spray or line with parchment paper

  3. In a small mixing bowl, combine oil and granita cracker crumbs, mixing together until all crumbs are wet

  4. Press mixture evenly into your prepared baking dish

  5. Drizzle HapiSoy Sweetened Condensed Soy Milk evenly over the crust

  6. Sprinkle oats, peanut butter chips, chocolate chips, and mini m&m's or dairy-free chocolate alternatives over top of condensed milk

  7. Press down gently with your hand

  8. Bake for 20-23 minutes (edges will be a light golden brown)

  9. Let cool in pan for about 1 hour before cutting
