Chewy Caramel Slice

Ingredients

Base

  • 1 cup self raising flour

  • 1 cup brown sugar

  • 1 cup desiccated coconut

  • 90ml vegetable oil (or 125g butter)

Icing

  • 375g (1 jar) HapiSoy Sweetened Condensed Soy Milk

  • 15ml vegetable oil (or 30g butter)

  • 2 tablespoons golden syrup

  • 220g dark chocolate

Method

  1. Preheat oven to 180ºc and grease and line a 20 x 30cm tray 

  2. Combine all the base ingredients, mixing well, then press into the greased and lined tray

  3. Bake in the oven for 10 minutes

  4. Combine HapiSoy Sweetened Condensed Soy Milk, vegetable oil (or butter) and golden syrup in a small saucepan and stir over medium heat until it boils

  5. Reduce heat and stir consistently for 5 minutes

  6. Spread the caramel mixture over the biscuit base and bake for a further 10 minutes

  7. Take it out of the oven and let it cool in the tray

  8. Stir dark chocolate in a heatproof dish above a pot of boiling water until melted

  9. Spread the chocolate over the caramel on the tray 

  10. Refrigerate until the chocolate sets and serve in slices
