Chocolate Hedgehog Slice

Ingredients

  • 60g vegetable oil or 175g butter

  • 3/4 cup HapiSoy Sweetened Condensed Soy Milk

  • 4tbsp cocoa

  • 2tbsp desiccated coconut

  • 1 egg or 1/4 cup egg replacer 

  • 1/2 cup shelled pistachios

  • 100g milk or dark chocolate

Method

  1. Stir butter (or oil), sugar and cocoa in a saucepan over a medium heat for 3 minutes until sugar is dissolved

  2. Remove from heat and add coconut, egg (or egg replacer), pistachios and biscuits

  3. Press mixture into a greased 18 x 28cm tin lined with baking paper

  4. Melt the chocolate in a bowl over boiling water until smooth 

  5. Pour chocolate over the tray and smooth to ensure it covers all of the hedgehog mixture

  6. Chill in the fridge for one hour and slice before serving
