Chocolate Pistachio Rolls


  • 375g (1 jar) HapiSoy Sweetened Condensed Soy Milk

  • 2 1/2 cups pistachio nut, crushed

  • 1 cup tea biscuit, crushed

  • 300g milk chocolate

  • 150g white chocolate

  • 5g pistachio nut, crushed (to garnish)


  1. In a large bowl, mix together HapiSoy Sweetened Condensed Soy Milk, ground pistachios, biscuits and cardamom until it forms a paste.

  2. Cover the bowl and leave the mixture for 10 minutes until it sets.

  3. Place a large piece of baking paper over a tray.

  4. Divide the pistachio paste into 6 portions and roll each into the shape of a small log then place them evenly across the baking paper.

  5. Melt the milk chocolate on a bowl over a pot of boiling water, stirring until smooth or in the microwave.

  6. Using a piping bag, pour the melted milk chocolate over the pistachio rolls in thin lines stringing across them.

  7. Allow to cool in the refrigerator.

  8. Follow the same method to melt the white chocolate and repeat the method for drizzling it over the pistachio rolls in a fresh piping bag

  9. Sprinkle the remaining ground pistachio before the chocolate dries.

  10. Set the pistachio chocolate rolls aside until firm then cut into small portions and serve.
