Coconut Pound Cake

Ingredients

  • 1 1/2 cups all purpose flour

  • 3/4 teaspoon baking powder

  • 1/2 teaspoon salt

  • 75g vegetable oil

  • 1/2 cup sugar

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 3/4 cup HapiSoy Sweetened Condensed Soy Milk

  • 3/4 cup apple sauce

  • 1 1/2 cups sweetened shredded coconut

Method

  1. Preheat oven to 160ºc. Grease a 9″ x 5″ loaf pan

  2. In a bowl combine flour, salt and baking powder, set aside.

  3. In the bowl of a stand mixer or hand mixer, mix the vegetable oil and sugar until light, about 2 minutes

  4. Add sweetened condensed milk and mix for only a few seconds. Add in the dry ingredients, mixing just until the flour is mixed in (don’t over mix)

  5. Add apple sauce and mix

  6. Add the extracts and shredded coconut

  7. Transfer the batter into a prepared pan, smoothing the top with a spatula

  8. Bake for 60 – 70 minutes, or until a thin knife inserted into the centre comes out clean

  9. If the top of the pound cake looks like it’s browning too quickly, place a piece of foil over it for the remainder of its time in the oven

  10. Cool in pan for about 10 minutes, then finish cooling on a wire rack
