Fluffy Marshmallow Slice

Ingredients

Base

  • 250g Marie biscuits, crushed

  • 1 cup desiccated coconut

  • 90ml sunflower oil

  • 1/2 jar (190g) HapiSoy Sweetened Condensed Soy Milk

Marshmallow

  • 3/4 cup caster sugar

  • 1/4 cup hot water

  • 1/2 teaspoon vanilla

  • 1/4 cup cold water

  • 2 teaspoons gelatine powder

  • 2 tablespoons desiccated coconut

Method

  1. Combine crushed Marie biscuits and desiccated coconut in a bowl

  2. Add HapiSoy condensed milk and melted butter and mix well

  3. Press into a tin and place base in fridge

  4. To begin the marshmallow topping place sugar and cold water in a bowl

  5. Beat mixture for 2-3 minutes

  6. Sprinkle gelatine over the hot water and whisk to dissolve

  7. While the gelatine mixture is still hot, combine it with the sugar mixture and beat it till it's thick and white

  8. Add vanilla

  9. Pour the marshmallow mixture on top of the base and sprinkle remaining coconut on it

  10. Serve chilled or at room temperature
