Fruit Bites

Ingredients

  • 1 jar (325g) HapiSoy Sweetened Condensed Soy Milk

  • 1/4 cup egg replacer 

  • 1/2 teaspoon bicarbonate soda

  • 3/4 cup sugar

  • 2 cups self-raising flour

  • 1 cup chopped, dried fruit of choice

  • 90g vegetable oil

  • 1/2 cup sugar

  • 3/4 cup oats

  • 2 teaspoons mixed spice

Method

  1. Pre-heat oven to 180ºc or 160ºC fan forced

  2. Grease trays and line with baking paper

  3. Beat the egg replacer and HapiSoy condensed milk together until creamy 

  4. Mix in bicarbonate soda, self-raising flour and fruit

  5. Separately, beat the vegetable oil, sugar, oats and mixed spice together 

  6. Place this on a flat plate

  7. Roll the dough mixture into balls and roll it into the topping mixture before placing on a tray

  8. Bake for 15-18 minutes and cool on a wire rack
