Lemon and Coconut Slice

Ingredients

Base

  • 395g (1 jar) HapiSoy Sweetened Condensed Soy Milk

  • 250g butter or 190ml vegetable oil

  • 2 packets scotch finger biscuits

  • 2 tsp grated lemon rind

  • 2 cups desiccated coconut

Icing

Method

  1. Combine HapiSoy Sweetened Condensed Soy Milk with butter or oil over a medium heat until well incorporated.

  2. Crush biscuits into small pieces, adding lemon rind and coconut, then mix well.

  3. Add the condensed milk mixture to biscuit mixture and mix well.

  4. Press into a greased and lined square tin and refrigerate for one hour.

  5. To make the icing, sift the icing sugar into a bowl and add lemon juice and butter or oil, mixing well until smooth.

  6. Pour icing over the base and sprinkle remaining coconut over it.

  7. Refrigerate until set and serve cut into squares.
