Lemon Slice

Ingredients

Base

  • 125g butter or 90g vegetable oil

  • 250g digestive biscuits, crushed

  • 190g HapiSoy Sweetened Condensed Soy Milk

  • 1 cup desiccated coconut

  • 1 lemon rind, grated

Method

  1. Mix all the base ingredients together 

  2. Spread evenly onto a greased 25cm x 18cm slice tin

  3. Put in the fridge to set for one hour

  4. For the icing, sift icing sugar into bowl then gradually add the lemon juice, stirring until a smooth paste forms

  5. When the base is set, cover with lemon icing

Icing

  • 195g pure icing sugar

  • 1 1/2 tbsp fresh lemon juice
