Lemon Slice
Ingredients
Base

125g butter or 90g vegetable oil

250g digestive biscuits, crushed

190g HapiSoy Sweetened Condensed Soy Milk

1 cup desiccated coconut

1 lemon rind, grated
Method

Mix all the base ingredients together

Spread evenly onto a greased 25cm x 18cm slice tin

Put in the fridge to set for one hour

For the icing, sift icing sugar into bowl then gradually add the lemon juice, stirring until a smooth paste forms

When the base is set, cover with lemon icing

1 1/2 tbsp fresh lemon juice
