Orange and Poppy Seed Cake

Ingredients

  • 375g HapiSoy Sweetened Condensed Soy Milk

  • 60g sunflower oil

  • 1 1/2 cups or 225g self raising flour

  • 2 eggs or 1/2 cup egg replacer

  • 2 tbsp orange juice

  • 2 tsp grated orange rind

  • 1 Tbsp poppy seed

Method

  1. Preheat the oven to 200ºC and line a baking sheet in a cake mould.

  2. Beat the oil, egg or egg replacer and sweetened condensed soy milk until
    they turn creamy.

  3. Meanwhile, sift the flour into a separate bowl. Add juice, rind, poppy seed and sugar mixture.

  4. Combine well with a spatula until everything gets well mixed and beat
    with an electric mixer for 1 minute on medium speed.

  5.  Pour mixture in prepared tin and place in oven.

  6. Reduce heat to 175ºC and cook for 30 minutes.

  7. Then reduce heat again to 160ºC and cook for a further 20 minutes. Make sure that the skewers inserted come out clean before removing from the oven.
