Sweet Date Crumble



  • 180g melted butter or 135ml vegetable oil

  • 150g brown sugar

  • 1 egg or 1/4 cup egg replacer

  • 1 tsp vanilla extract

  • 1 3/4 cup all purpose flour

  • 1 tsp baking powder

  • 2 cups rolled oats


  • 375g (1 jar) HapiSoy Sweetened Condensed Soy Milk

  • 1/4 cup softened butter or 2 tbsp vegetable oil

  • 3/4 walnuts

  • 2 1/2 cups dates, pitted and chopped

  • 1 1/2 cup dark chocolate chips

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract


  1. Preheat the oven to 180ºc fan-forced.

  2. To begin the base, combine butter or oil, sugar, egg or egg replacer and vanilla in a large bowl until well incorporated.

  3. Add flour, baking powder and rolled oats and mix well.

  4. Press half of the mixture into a greased 25cmx30cm baking dish and place in the fridge to chill.

  5. To prepare the filling, knead the dates with butter or oil then slowly mix in HapiSoy Sweetened Condensed Soy Milk.

  6. Mix in the chopped nuts, chocolate, cinnamon and vanilla.

  7. Spread the date filling evenly over the refrigerated base and then crumble the remaining base mixture on top.

  8. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.

  9. Serve when cooled.
