Vegan Lemon and Coconut Slice

Ingredients

Base

  • 395 g - HapiSoy Sweetened Condensed Soy Milk

  • 185 g - sunflower oil

  • 2 packets McVities Hob Nobs or vegan oat biscuits

  • 2 tsp - grated lemon rind

  • 2 cups - desiccated coconut

Method

  1. Place the condensed soy milk and oil in a saucepan.  Stir over gentle heat until combined.

  2. Crush biscuits finely, add lemon rind and coconut.  Mix well.

  3. Add the milk mixture to biscuit mixture and mix well.  

  4. Press into greased/lined lamington tin and refrigerate for 1 hour 

  5. Icing - whisk ingredients until smooth and pour/spread over biscuit base 

  6. Sprinkle with coconut and refrigerate until set.  Cut into squares.

Icing

  • 1 + 3/4 cups - icing sugar

  • 3 Tbsp – lemon juice

  • 10 g - vegan butter

  • 2 Tbsp - dessicated coconut
