Vegan Lemon and Coconut Slice
Ingredients

395 g - HapiSoy Sweetened Condensed Soy Milk

185 g - sunflower oil

2 packets McVities Hob Nobs or vegan oat biscuits

2 tsp - grated lemon rind

2 cups - desiccated coconut
Method

Place the condensed soy milk and oil in a saucepan. Stir over gentle heat until combined.

Crush biscuits finely, add lemon rind and coconut. Mix well.

Add the milk mixture to biscuit mixture and mix well.

Press into greased/lined lamington tin and refrigerate for 1 hour

Icing - whisk ingredients until smooth and pour/spread over biscuit base

Sprinkle with coconut and refrigerate until set. Cut into squares.

1 + 3/4 cups - icing sugar

3 Tbsp – lemon juice
-
10 g - vegan butter
-
2 Tbsp - dessicated coconut
